Welcome one and all to Biffy's Banquet! Here you will view Biffy Recipes. In case you don't know, I've included a picture of the titular chef.

On a very serious note, some of these are reconstructions of my mom's recipes we used to make together. Any text in red is directly from her. I used to need to text her a lot to remind me of some of our recipes. It's hard to look at those texts every time I want to cook something. Blue text is from my dad who to this day is alive and kicking!


Bread

Ingredients: 4 cups room temperature to warm water, 2 packs of yeast, 1 tablespoon sugar, 1 teaspoon salt, 2 tablespoons olive oil, a little under 1 bag of flour

Simple ingredients, but steps are important...


Combine warm water with all the yeast, add the sugar and a handful or so of flour to "feed" the yeast. Let sit for a few minutes. Add the oil and salt last. Salt is what slows the yeast down, so be generous with the wait time before to let the yeast hang out and do their thing. Gradually add flour. Once thick enough, begin kneading either by hand or with stand mixer.
It will be done when you get it to the texture of chewed bubble gum-ish. Coat a bowl in olive oil, tuck your dough ball into a.. ball, then let sit in a warm-ish place to rise for at least 40 mins.
After it rises, shape bread into loaves, bread rolls, or whatever you wanna do. Can also roll in herbs and garlic or make cinnamon buns. Either way. Shape it then bake at 425 for 20-25 mins.
We used to let it rise a second time after shaping, but that's really not needed.
Mac Und Cheese

Ingredients: 2 lbs mac, 1.5 to 2 lbs cheese (negotiable), 2 cups milk, 2 eggs, 1 can cream of chicken soup, 1 tube ritz crackers on top or breadcrumbs.
Of course boil your mac first. TIP: boil in chicken stock for extra flavor.

Make your slops..!


Get a 9x13 pan and add your cream of chicken, cheese, eggs, milk. Mix in your seasonings at this point. Mix in your cooked mac until everything is combined. This is a good time to adjust the recipe too, add more cheese, add some butter, who cares! Go crazy! Top with your breadcrumbs or smashed ritz crackers and be sure to add extra seasonings on top for color. add a bit of butter as well on top.
cover with foil bake on 400 for 40 mins, uncover and bake 10 more mins.
Recommended seasonings: Tony Chachere's creole, Natures Seasonings, Paprika, Black Pepper, Garlic salt or powder, Slap Ya Mama, ETC.


Broccoli Casserole

Ingredients: brocolli (amount?), 1.5 to 2 lbs cheese (negotiable), 2 cups milk, 2 eggs, 1 can cream of chicken soup, 1 tube ritz crackers on top or breadcrumbs
cover with foil bake on 400 for 40 mins, uncover and bake 10 more mins
This is basically an altered version of the mac and cheese recipe and it hasn't been made by anybody in almost a decade. I think onions might have been in here too but I really don't know. If you have a relative you cook with, I am begging you, ask for their recipes no mattter how easy you think they are to make, and ask them now. Write them down. It's gutwrenching. She didn't text me this because I didn't ask for it. Now nobody knows. Probably nobody will make or eat this ever again.
Ultra Nice Mega Rice

Make cilantro lime rice, yellow rice, black beans and rice, or red beans and rice (you will want the vigo brand.) Cook your rice per package instructions, then add fajita bell peppers, salsa (a LOT), corn, fresh cilantro, fresh lettuce, or really whatever you have layin around. The tip is to make almost half of your bowl salsa. Top with valentina sauce, a bit of cheese, and tortilla chips. You can lose a shit ton of weight on this and not be hungry.
Mom's Fruity Cake Base
Ingredients: 3 cups bisquick, 1 cup sugar, 1/4 cup oil, 1/2 cup milk 2 or more cups of fruit
Depending on what fruit you are using, you may need to play around with measurements - this recipe is very forgiving and you can do basically whatever you want. This was definitely one of me and mom's favorites.
Depending on the fruits too, other additives are recommended such as - 1 tsp vanilla extract, chocolate chips, chopped nuts, raisins etc. Play around with it!
Oven temp 350 for 35 mins if using 9 by 13 pan, 45 mins if bundt cake - can substitute blueberries for bananas or pumpkin filling.
Cabbage Und Potatoes
In big pot add onions and potatoes - measurements don't matter much but standard is 3 onions, 3 potatoes. Cook for 10-15 mins until soft ISH then add 1 head of chopped raw cabbage, let cook down until cabbage is tender - don't overcook, shouldn't be mushy by the end.
Taxi
My dad's specialty. It is called taxi because you throw shit together fast before you miss your taxi.
Quote my dad, exact words:

GET THE BIGGEST POT YOU GOT -- PUT INTO IT:
STEW MEAT OR BONELESS CHICKEN THIGHS -> (LOAD IT RIGHT UP)
2 BIG CANS POMODOR PELATI
2 CUT UP GREEN PEPPERS (IN STRIPS)
2-3 CANS OF TOMATO SAUCE
2-3 CANS OF TOMATO PASTE
2-3 CANS GREAN BEANS (USE ITALIAN FLAT BEANS IF YOU CAN GET THEM)
BOIL IT DOWN - PUT CONSTARCH TO THICKEN IT- THEN SIMMER 'TIL THICK
SERVE OVER RICE -- MIGHTY GOOD

Really Nice Super Rice
ok this is another dietary moment - get some prepackaged stir fry frozen vegetables. you're looking for a sweat peas and water chestnuts moment. if you can get the one with baby corns in it you're really onto something.
ok. so make your white rice first. then what you're gonna do is add it to a wok with your vegetables. you don't need any kind of oil for this. you're gonna need sriracha soy sauce teriyaki sauce toast some sesame seeds in there and lots of ginger. you want like 3/4ths of your stuff to be vegetables to make it delightful and nutritious.
Ultra Nice Sushi Rice
make your sushi rice first. do white rice and cook it with a dash of mirin and rice vinegar. who cares if it's accurate. just do it.
let it cool COMPLETELY because if you don't and you add the veggies to it its gonna get gross. chop up some carrots and cucumber and add it to the cooled rice. smash an avocado in there. top with furikake. add soy sauce, maybe sriracha if you want.
Peach Pie
this is a partial reconstruction! these measurements are for a 9x13 flat pan, so its more like a cobbler. Your ratio is 5 cups fruit to 1 cup sugar -- we used to do this with fresh peaches, so you'd need to boil the fruit first (not too long), then add to ice water to easily get the skins off. We'd use just prepackaged pie crusts and if you want to you can do like a lattice top. Use some kind of starch to thicken the filling -- we'd sometimes just put a little bit of flour OR bisquick, wahtever is on hand. We never used to put any kind of seasonings in this believe it or not -- me and my mom love(d) the fresh peaches so much we didn't want to add anything to diminish their powerful flavor!! If you are ever in the south east try the peaches in june and july, it will truly be a game changer for you..! That being said, you may need to adjust the sugar depending on if you use fresh sweet peaches, tart peaches, or the can peaches. Don't be afraid to modify it. anyway. the long and short of it
9x13 pan. 5 cups fruit/1 cup sugar ratio. prepackaged piecrust. 425 degrees for 25 mins, then decrease heat to 350 for 30 minutes. add some kind of starch or flour to the middle to thicken. use your judgement.
Apple Pie
Ah.. i am nostalgic -- every fall we'd go to a mom and pop apple orchard and pick a bunch of apples then boil them down into apple butter and make lots of apple pies. apples take a while to go back so it was great! we usually used granny smiths in the pie. apple butter recipe wasn't anything special and we really only made it when the apples started to go bad so they wouldnt waste.
just like peach pie recipe, these measurements are for a 9x13 pan. the ratio on this SAYS 8 cups fruit to 1 cup sugar but that probably isn't right. it might be 5:1 like the peach pie. I'll make this again and then update. Either way - you're gonna wanna also put apple pie spice to taste of course, be generous with it! easiest way to do it is add the spice to the sugar until it gets to be a good color/flavor. cooks for the same time/heat as peach pie, 425 degrees for 25 mins, then decrease heat to 350 for 30 minutes. add some kind of starch or flour to the middle to thicken. use your judgement.
Banana Pudding Cookies
1 cup butter
3/4 cup brown sugar
1/4 cup sugar 1 3.4 oz package banana instant pudding mix
2 eggs
1 teaspoon vanilla extract
2 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped vanilla wafers
white chocolate chips (just add them who cares)
salted nuts (measurements do not matter but you do want to smash them a bit - macadamia nuts are good)
say it with me people!!! 350! 10 minutes! cookie sheet! parchment! that is all!!
